Chef Romera’s first project in the United States offers guests an opportunity to experience neurogastronomy, a culinary style he pioneered while working as a neurologist in Barcelona, Spain. Neurogastronomy embodies an artistic and scientific approach to cuisine by means of a thoughtful study of the sensory properties of each ingredient. The result is a natural cuisine driven by the taste-memory and the emotions of food. Through the bright coloring and simplicity in the design, PSD’s branding of Romera alludes to the wide array of flavors and unique dishes to be tasted there. We used the natural imagery of butterflies on the menu cards, twelve individual butterflies to reflect the twelve courses.
